E pulpette

Pulpette are made everywhere in Corsica and right throughout the year.

These are meatballs made using beef or veal. They are often flavoured with mint and are usually accompanied by tomato sauce and served with pasta or mashed potato.

Ingredients to serve 6 people:

500g beef.

500g veal.  

A few stalks of parsley. 

A few mint leaves

1 onion

1 garlic clove

3 slices of stale bread

Milk, 2 eggs, flour, tomato sauce, salt, pepper. 

Soak the slices of bread in milk until they have absorbed much of the liquid, then drain.

Chop the mint, garlic, parsley and onion and mix this with the bread.

In a bowl, combine the mixture with the meat and incorporate the eggs, then season.

Once this has been done, shape the mixture into medium sized balls with the palm of your hand and roll them in the flour.

Place the Pulpette in an ovenproof dish and pour in the tomato sauce so that it reaches halfway up the meatballs.  

Place in an oven at 180°C for about 30min.
