A Castagniccian road winding its way up to San Lorenzu, a small village clinging to the mountainside, surrounded by a green micro-region... This is where Benedict Rinaldi breeds his pigs in a completely traditional manner.
He complies with the requirements of the Prisuttu, Coppa and Lonzu Corsica AOC label, raising Porcu Nustrale high in the mountains, and releasing them during chestnut season to allow them take on its deep flavours. He has chosen to produce a refined selection of preserved meats, finished in his cellar and meeting the demands of the AOC specifications, with consistently high quality.
Processing is carried out in the same location. All his products are butchered in a clean, modern laboratory befire being smoked and dried.
Montre San Petrone watches over his farm from a height of 1,767 metres. This is the name he has chosen for his shop in Saint-Florent: "Au San Petrone", open from April to October. Sales also possible by appointment.
