Situated at the foot of Monte Astu (1535m) and a few kilometres from the beach of Ostriconi, our family charcuterie business was founded in 1905 by our paternal great grandfather. Here, you will find our specialities where our savoir-faire has been passed down through the generations. The salting and preserving techniques have been developed by us. The Charcuterie Costa et Fils only uses the very best meat in the production of its entire range, and they are chosen according to very strict criteria. Our establishment is committed to providing rigorously high standards of quality control (traceability) to ensure the safety standards of all its products. Our products are stuffed into natural casings that are traditionally used and all our charcuterie is smoked over oak or chestnut wood. After this comes the process of curing and maturing. The meat is always treated using traditional methods, dry salted and the time of drying and maturing is strictly respected, which is a guarantee of quality. Our salted products enjoy the favourable conditioned afforded by the micro-climate of the Balagne. The saucissons, figatelli and other varieties of coppa or lonzu therefore have a very particular and well appreciated flavour. Our shop is open all year round.
