Cheese-making in Corsica goes back to the dawn of time, and our cheeses are as varied as their tastes. Cheesemaking is much more than just a job, it's a tradition built up over several generations. For the Ottavi family, a product of this history, the maturing process inherited from ancestral know-how gives their cheeses the unique, assertive taste that you'll find throughout their range.
