Perched on the mountainside nearly 500 metres above sea level, San Nicolao * looks down onto the Moriani plain. In the 1980s, Ghislaine Fesnel wanted to go back to the countryside and chose to live here.
She is now a proud goat farmer! She loves her goats and the freedom they bring her. “I adore nature, with nobody standing over me, and I need my animals!” She looks after a herd of a hundred or so goats, who have lovely names such as Magali, Poupette, Halloween, and Dumbo (due to the size of its ears!), and roam freely inside a huge enclosure.
The goats only return to their shelter at night and are milked there by hand every morning. Later, at the cheese dairy, situated down in the village, production begins on the small round, fresh white cheese. The rest of the day is spent maturing the cheese, using traditional methods. It has to be turned, rubbed, and scraped...
However, Ghislaine still finds the time during these full days to welcome visitors to the cheese dairy, something she takes great pleasure in. The sheer beauty of the location and her table d’hôte are well worth discovering.
