A renowned restaurateur, he has built up a solid network of local artisans: winemakers, pork butchers, cheesemakers, beekeepers, olive growers, livestock farmers and fishermen. His attachment to the land gives La Table a strong identity, with each product telling its own story. Here, short-distance sourcing is a matter of course: free-range meats, fresh fish, fruit and vegetables from neighbouring market gardeners, sourdough bread made by passionate bakers.
