Where does your passion for plants come from ?
I am originally from Le Cruzzini, a region of Corsica that is very wild and proud of that fact. It bears the name of the crystal clear river that runs through it and is home to the famous native species of Corsican trout (the Macrostigma). As a child, I would spend hours observing nature, the flora and fauna, but most of all fishing.

We have a stable of around 30 ponies and horses that, for the most part, have been born and reared right here. Could you tell us a little bit about your career path in the restaurant business ?
I was originally from Sorbollano (close to Bavella), and I spent my childhood wandering around the rooms of the restaurant at the Hôtel Le Casello, a former family run inn where I started out doing my first little restaurant jobs. My mother was an excellent cook and, without a doubt, she passed on her taste and her pleasure of cooking to me.

Né au bord de la Méditerranée, la mer me passionne depuis ma plus tendre enfance. Brevet d'Etat de plongée sous-marine depuis 20 ans avec plus de 5 000 plongées à mon actif, j'ai exploré les fonds marins en Corse, notamment pour des missions scientifiques (Station de recherche océanographique de Calvi et Université de Corse). Titulaire d'un diplôme d'animateur en biologie marine, je partage volontiers ma passion et mes connaissances sur la faune et flore sous-marine avec tous les amateurs de plongée qu’ils soient néophytes ou expérimentés.
