From the wide selection available, there are 3 local grape varieties that stand out and reinforce this character: Sciaccarellu, Niellucciu and Vermentino. The creation of ceramics is, for me, just another form of expression like any other.
Created around 10 years ago, kitesurfing is a water sport where a surfboard is continuously pulled along by a flying kite. It is a sport that is attracting more and more participants, especially those who are in search of a few thrills.
Where does your passion for plants come from ?
I am originally from Le Cruzzini, a region of Corsica that is very wild and proud of that fact. It bears the name of the crystal clear river that runs through it and is home to the famous native species of Corsican trout (the Macrostigma). As a child, I would spend hours observing nature, the flora and fauna, but most of all fishing.
As a former employee of the Corsican Natural Regional Park (refuge keeper on the GR20 route), I founded Rêves de Cimes in 2006. With 5 years of experience gained with the Corse Rand’eau association, specialists in outdoor activities, I decided to set up my own company in order to develop a range of activities designed to help people discover Corsica in a different way. I have been involved with tourism and outdoor sports now for 15 years and my enthusiasm is as keen as ever.
Camping on the farm is, above all, a concept focused on nature and the activity that is provided on-site is horse-riding. We have a stable of around 30 ponies and horses that, for the most part, have been born and reared right here. The equestrian centre operates throughout the year and we teach horse-riding with an ethological and natural slant during the school term (for local schools) and we offer horse-riding along the seashore, trails for 1 to 6 days between the sea and the mountains, courses focusing on ponies or horses…

Could you tell us a little bit about your career path in the restaurant business ?
I was originally from Sorbollano (close to Bavella), and I spent my childhood wandering around the rooms of the restaurant at the Hôtel Le Casello, a former family run inn where I started out doing my first little restaurant jobs. My mother was an excellent cook and, without a doubt, she passed on her taste and her pleasure of cooking to me.
Naturaliste, ornithologue, guide de moyenne montagne, guide conférencier, guide de pêche…Paul Poli est un passionné de nature et c’est avec enthousiasme qu’il partage son amour pour sa terre natale. Après avoir travaillé dans la Réserve de Biguglia, lieu de prédilection pour de nombreuses espèces d'oiseaux aquatiques, la préservation de l’environnement devient un aspect essentiel de sa philosophie.
Né au bord de la Méditerranée, la mer me passionne depuis ma plus tendre enfance. Brevet d'Etat de plongée sous-marine depuis 20 ans avec plus de 5 000 plongées à mon actif, j'ai exploré les fonds marins en Corse, notamment pour des missions scientifiques (Station de recherche océanographique de Calvi et Université de Corse). Titulaire d'un diplôme d'animateur en biologie marine, je partage volontiers ma passion et mes connaissances sur la faune et flore sous-marine avec tous les amateurs de plongée qu’ils soient néophytes ou expérimentés.
